Preparation

Rinse basmati rice until the water runs clear, then soak in water for 15 minutes and drain.

Heat vegetable oil in a heavy lidded pot and fry thinly sliced red onions until deeply browned and caramelised.

Stir in minced garlic, grated ginger, cumin, cinnamon, and bruised cardamom pods, stirring for 1 minute.

Add peeled and diced potatoes, coating thoroughly in the fragrant browned onion paste.

Tip in drained basmati rice and stir gently for 1 minute to toast grains.

Pour in 650 ml hot water and salt, bringing to a rapid boil until liquid reduces to rice level.

Cover tightly, turn heat to lowest setting, and steam undisturbed for 15 minutes until potatoes and rice are fluffy and tender.
