Preparation
- 1
Parboil whole unpeeled starchy potatoes in salted water for 12 to 15 minutes until just knife-tender, then cool completely and peel.
- 2
Coarsely grate the cold potatoes onto a clean board or bowl. Season with salt, black pepper, and a light grating of fresh nutmeg.
- 3
Melt half the butter in a 24 cm non-stick frying pan over medium heat.
- 4
Add the grated potatoes, pressing down gently with a spatula to form a neat, even cake. Cook undisturbed for 12 to 15 minutes until the underside is deep golden and crisp.
- 5
Place a flat plate over the pan, carefully flip the rosti onto the plate, and slide the remaining butter into the pan to melt.
- 6
Slide the cake back into the pan crisp-side up and fry the second side for another 10 to 12 minutes until equally crunchy and browned. Cut into wedges to serve.
