Preparation
- 1
Trim the ends of the ripe plantains, score the dark skins lengthwise, and peel away the skin.
- 2
Slice the plantains diagonally into 1 cm thick oval slabs.
- 3
Pour the vegetable oil into a wide frying pan over medium heat until shimmering.
- 4
Carefully lay the plantain slices into the hot pan in a single layer without overcrowding.
- 5
Fry for 3 to 4 minutes until the undersides are deep golden brown and lightly caramelized.
- 6
Flip each slice and fry the second side for another 3 minutes until tender all the way through.
- 7
Drain quickly on a paper towel, sprinkle with sea salt, and serve piping hot.
Fresh ripe plantains with yellow peel and black spots are ideal for natural sweetness.
