Preparation

  1. 1

Slice tempeh into thin matchsticks, about 3cm long.

  2. 2

Heat vegetable oil in a skillet over medium-high heat and shallow-fry the tempeh until golden and crunchy, then drain on kitchen paper.

  3. 3

Thinly slice shallots, garlic, and chilli.

  4. 4

Leave 1 tablespoon of oil in the skillet and sauté the shallots, garlic, and chilli until aromatic.

  5. 5

Stir in brown sugar, soy sauce, tamarind paste, salt, and 2 tablespoons of water, cooking until the mixture bubbles and thickens into a glossy glaze.

  6. 6

Turn off the heat, add the fried tempeh matchsticks, and quickly toss to coat thoroughly in the sticky sauce.

Tempeh is sold in health food stores and Asian markets.
