Preparation

  1. 1

Pound the garlic and bird's eye chillies together in a mortar and pestle or finely chop them.

  2. 2

Heat vegetable oil in a wok over high heat until sizzling hot.

  3. 3

Add the minced garlic-chilli mixture and stir-fry rapidly for 30 seconds until deeply aromatic.

  4. 4

Add the ground pork, breaking it apart with a wooden spoon, and fry for 3 to 4 minutes until fully browned.

  5. 5

Stir in fish sauce and brown sugar, tossing over high heat to caramelise slightly.

  6. 6

Remove wok from heat, toss in the fresh basil leaves, and fold until wilted before serving immediately.

Thai bird's eye chillies pack significant heat; adjust quantity to taste.
