Preparation

Place couscous and 1/2 tsp salt in a bowl, pour over 300ml boiling water, cover tightly, and allow to steam for 5 minutes.

Dice the zucchini finely and drain the chickpeas.

Heat olive oil in a wide frying pan over high heat, add the zucchini, and sauté for 4 minutes until golden-edged.

Add the drained chickpeas, harissa paste, and ground cumin, tossing over medium heat for 2 minutes until hot and fragrant.

Fluff the steamed couscous with a fork, tip into the pan with the vegetables, squeeze over the fresh lemon juice, and toss well to serve.
Harissa paste is sold in Middle Eastern and North African grocers or supermarket international aisles.
