Preparation

  1. 1

Finely mince the tender white parts of the lemongrass and mince the garlic cloves.

  2. 2

Cut chicken breast into bite-sized strips and toss in a bowl with half the minced lemongrass, half the garlic, 1 tablespoon fish sauce, and 1 teaspoon brown sugar.

  3. 3

Heat vegetable oil in a wok or large frying pan over high heat until smoking hot.

  4. 4

Add remaining garlic and lemongrass, sizzling for 30 seconds until deeply aromatic.

  5. 5

Add the marinated chicken and stir-fry briskly for 4 to 5 minutes until sealed and lightly browned.

  6. 6

Toss in sliced bell pepper and drizzle in remaining fish sauce, soy sauce, and brown sugar, stir-frying for 2 to 3 minutes until chicken is cooked through.

  7. 7

Garnish with sliced spring onions and serve immediately over steamed rice.

Lemongrass and fish sauce are readily available in Asian grocers and most supermarkets.
