West African Groundnut Sweet Potato Stew

Heat vegetable oil in a heavy Dutch oven or saucepan over medium heat; sauté onion, garlic, and ginger until fragrant.

Stir in tomato paste and chilli flakes, cooking for 2 minutes until deep brick red.

Peel and dice sweet potatoes into bite-sized cubes, then add them to the pot along with 700 ml water and the crumbled stock cube.

Bring to a simmer, cover, and cook for 15 minutes until sweet potatoes are tender.

Whisk smooth peanut butter with a ladle of hot broth until loosened, then stir it back into the stew.

Add the fresh spinach leaves, stir until wilted, and simmer for another 3 minutes before serving with rice.
Groundnut or peanut butter provides the traditional rich base.
