Preparation

  1. 1

Pound the boneless pork steaks between sheets of cling film until evenly thin, about 5 mm thick.

  2. 2

Season both sides of the pork cutlets generously with salt and black pepper.

  3. 3

Set up three shallow bowls: one with plain flour, one with lightly beaten eggs, and one with breadcrumbs.

  4. 4

Dredge each cutlet in flour, shake off excess, dip thoroughly in beaten egg, then coat evenly with breadcrumbs without pressing down too firmly.

  5. 5

Heat butter and vegetable oil together in a large skillet over medium-high heat until sizzling hot.

  6. 6

Fry cutlets for 2 to 3 minutes per side until golden brown and crisp, swirling the pan gently so hot fat washes over the top.

  7. 7

Drain on paper towels and serve immediately with fresh lemon wedges.
