Preparation

  1. 1

Rinse noodles under warm running water to loosen the strands and drain thoroughly.

  2. 2

Whisk together soy sauce and mirin in a small bowl for the stir-fry sauce.

  3. 3

Heat vegetable oil in a wide wok over high heat.

  4. 4

Add sliced mushrooms, shredded cabbage, and julienned carrots, stir-frying rapidly for 3 minutes until tender-crisp.

  5. 5

Tumble the noodles into the wok, tossing constantly over high heat for 2 minutes to sear slightly.

  6. 6

Pour over the sauce mixture and sesame oil, tossing vigorously until everything is glossy, evenly coated, and piping hot.

Pre-cooked shelf-stable or frozen udon noodles reheat quickly in minutes.
